Ingredients
- 1 can flaked skipjack tuna in water, drained
- 1/2 cup chickpeas
- 1/2 English cucumber quartered
- 3/4 cup matchstick carrots
- a handful of micro arugula
- 1 tbsp hemp seeds
- 1 tbsp olive oil
- 1 tbsp lemon juice
- salt and pepper to taste
Instructions
- Combine all of the ingredients
- Serve immediately
Notes
Sometimes I like to mix the lemon juice into the tuna so it absorbs the flavors.
Use as much lemon juice as you prefer since this is a very simple salad you can boost the flavors of the salad with more lemon (or if you’re like me and have issues with acidic foods you can stick to 1 tbsp)
