Cilantro Lime Crema Avocado Toast With Microwave Egg “Scramble”

Lately, I’ve been inspired by food bloggers marketing on Pinterest (as a Pinterest Manager that platform is my life). The food photography is amazing, there’s an almost limitless amount of meal ideas to choose from, and it’s one of the more fun niches to work with since Pinterest loves food!

So, naturally, I was inspired to share my own simple meal ideas for the work from home single who wants to eat healthily but doesn’t want to spend too much time in the kitchen (wooo what a mouthful!).

I took my camera with me to the kitchen and my first recipe post was born – I’m calling it Cilantro Lime Crema Avocado Toast With Microwave Egg.

This easy lunch recipe only takes 5 minutes to prepare and finish thanks to the microwave egg cooker I used. This kitchen tool will change your life! So today, I’m sharing how to make this quick toast recipe using microwave egg. Let’s go!

How To Make The Best Avocado Toast

1) Use A Ripe Avocado

Avocados can be fickle. One minute they aren’t ready to eat and the next they are overly ripe. The trick is to catch them at their prime and eat them quickly. Choose an avocado that is softening when you press on the skin, but not mushy. You want the avocado to be easy to mash with a fork but not beginning to turn brown.

2) Buy Quality Bread

For avocado toast I like to use large pieces of marble rye or sourdough. These toast really well and add a nice base for your avocado.

3) Flavor It Up!

Avocado on toast with microwave egg is nice, but we want to turn the traditional avo toast recipe up on it’s head and add some flavors! In this recipe I use Presidents Choice Cilantro Lime Crema, but you can use whatever sauce you like. Other flavors that would go well on top are flaked chili peppers, hot sauce, red onion, or feta cheese.

How To Cook Egg Scramble In The Microwave

The secret to this recipe being so quick and easy is the microwave egg cooker. There’s no need to pull out a frying pan, wait for it to heat and cook your eggs. Instead, you zap it in the microwave for 1 minute and 10 seconds and have fully cooked eggs!

Step 1: Prepare Your Eggs

Crack two eggs into the bottom half of your microwave egg cooker. Add salt and pepper and whisk with a fork until the yolk is broken and combined.

Step 2: Microwave Your Eggs

Close the lid on your microwave egg cooker and microwave for 1 minute and 10 seconds. You may hear some popping but that’s just the egg cooking!

When removing from the microwave, be careful it will be HOT. Lift the lid carefully and avoid the steam.

Step 3: “Scramble” Your Microwave Egg

Using a fork or knife, cut through and mash the cooked egg to break it up. Continue to do this until you get the “scrambled” egg consistency you like.

How To Plate Your Avocado Toast With Microwave Egg “Scramble”

To finish plating your food, top each slice of toast with the mashed avocado and microwave egg scramble.

Then drizzle the cilantro lime crema on top for some Mexican inspired summer flavor!

Cilantro Lime Crema Avocado Toast With Microwave Egg Scramble

Equipment

  • 1 Microwave Egg Cooker (links in post)

Ingredients

  • 1 Avocado
  • 2 eggs
  • 2 slices marble rye bread
  • drizzle avocado lime crema (I used Presidents Choice brand)

Instructions

  • Place your marble rye slices in the toaster. I prefer my toast on the crispier side, but you can toast yours to your own personal preference.
  • As your bread toasts, crack two eggs into your microwave egg cooker. Add salt and pepper. With a fork, whisk until combined.
    Close the lid, and microwave for 1 minute and 10 seconds.
  • While your eggs cook, slice an avocado in half and discard the pit. Scoop your avocado into a bowl and mash with a fork. Set aside.
  • When your toast is ready, divide your mashed avocado between the two slices, spreading it to the edges.
  • Grab your cooked eggs from the microwave and carefully open the lid (there will be steam!). With a fork, cut and mash the cooked egg until it's broken up into a scrambled egg consistency. Add this on top of your avocado toast, dividing it between the two.
  • Now, drizzle your avocado lime crema on top of your toast. Some other optional toppings that would work well are chili flakes, hemp seed, or sesame seed.
  • Serve while hot!
