Easy Stir Fried Udon Noodles With Shrimp And Peanut Lime Sauce
One of my favorite take-out meals is shrimp and crab poke bowls – or any Asian-inspired bowl for that matter. The combination of a warm grain like rice, ramen, or udon noodles with fresh ingredients like lettuce is the perfect combo!
This Shrimp & Udon Noodles Bowl is inspired by buddha bowl-type recipes. Made with jumbo shrimp, udon noodles and tossed with veggies and a peanut lime sauce, it’s a quick and flavorful dinner recipe you will want to make again and again.

What Are Udon Noodles Made Of?
The first time I came across udon noodles was at a fast-food Japanese restaurant in my local mall. They are thick and chewy and have a neutral flavour that can be combined with anything. Udon noodles are made with wheat flour, salt, and water – but it’s truly the size and texture that I love.
Are Udon Noodles Healthy?
Udon noodles on their own are a low calorie carbohydrate. They don’t have much nutritional value other than being a satisfying filler for your meal. Typically, you wouldn’t be eating these without adding good-for-you ingredients like broccoli, fresh lettuce, carrots, chicken, shrimp, nuts, or seeds.

This recipe is easy to make and requires very little prep. By using a frozen veggie mix instead of fresh (I always keep a bag of frozen for this reason), you can cut your recipe time in half. No chopping is required.
The chewy noodles, combined with the salty crunchy peanuts, flavorful peanut lime dressing, and fresh crispy lettuce make a satisfying meal.

The Ingredients You Will Need For Your Udon Noodle Stir Fry
To make this recipe you will need:
Olive Oil – to saute the shrimp
Raw Jumbo Shrimp – I always have a bag of frozen raw jumbo shrimp in my freezer. It’s a quick and healthy protein you can throw into almost anything. They only take 5 minutes to cook on the stove top and take on the flavor of your seasoning.
Frozen Vegetable Mix – Like the shrimp, I always have a couple bags of frozen vegetables in my freezer for days when I don’t have fresh produce or I’m feeling lazy.
Udon Noodles – You can find these in the Asian food section of your grocery store. They are normally packaged into smaller packets, which makes it easy to portion it out!
Peanut Lime Sauce – Again, cutting corners. I used a Peanut Lime Vinaigrette from President’s Choice. If you can find an asian-inspired peanut dressing at your grocery you can save time making the sauce from scratch. IF you would like to make it yourself, it’s actually fairly easy and there are hundreds of recipes on Pinterest you can use.
Roasted Salted Peanuts – I throw a handful on top for extra texture and saltiness. Plus, it adds to the peanut dressing.
Fresh Romain Lettuce – Chop up 2-3 leaves of romaine lettuce for something fresh and crispy. I was inspired by the Japanese poke bowl and how they add lettuce on top of the rice.

How To Make Easy Stir Fried Udon Noodles With Shrimp And Peanut Lime Sauce
Prepare your ingredients and follow these steps to create your stir-fried udon noodle bowl the same way I did!
Heat a stir-fry pan on medium-high heat. Add olive oil and frozen shrimp. Let it sit on one side for a few minutes, or until pink and firm.

When one side of your shrimp is done, flip them over. At this point, I add in my frozen veggies on top and let it sit so the shrimp continues to cook undisturbed and the veggies begin to thaw.

When the shrimp is cooked and the veggies are no longer frozen, I throw the udon noodles on top to heat up and soften. Note: when opening your udon noodles, gently massage them to break them up in the bag and prevent clumping.

Let the noodles sit for 2 minutes before combining with the veggies and shrimp. Wait another minute and add in your peanut lime sauce. Stir to combine and let sit for 30-60 seconds more.


When the noodles and sauce are heating through, plate your mixture. I like to use a shallow but wide bowl so I can add toppings without burying my noodles at the bottom.

Top your stir-fried udon noodle bowl with chopped romaine lettuce and roasted peanuts. Serve hot!

Ingredients
- 1 tbsp Olive Oil
- 1 Cup Frozen Veggie Mix
- 6 Frozen Raw Jumbo Shrimps
- 1/8 cup Peanut Lime Sauce I used Presidents Choice brand
- 1 packet Udon Noodles
- handful Salted Roasted Peanuts
- 2-3 pieces Romain lettuce, chopped
Instructions
- Heat olive oil in a deep stir fry pan on medium-high
- When the oil is heated, add frozen shrimp and saute one side for 3-5 minutes or until pink
- Flip shrimp over to uncooked side and add frozen veggies on top. Let the veggies thaw while the shrimp continues to cook (about 3 minutes). Once the shrimp is cooked through you can stir it up!
- When the veggies are no longer frozen and almost cooked, add the udon noodles on top to heat and steam. Do not stir yet. Let the noodles sit for 2 minutes before combining.
- Add your peanut lime vinaigrette or sauce on top. Wait 30-60 seconds and combine.
- Plate your peanut lime stir fried udon noodles.
- Top with roasted peanuts and chopped romaine lettuce. Serve hot!
